Tiger Chef...a Refugee Success Story

I have to admit that I am slightly distracted by the political news of the day.  There is nothing that I can do about war and drama across the water but I can choose to focus on a happy story here in Mid-MO.  

A few weeks ago my hubby and I headed north on Rangeline Road up to Rainforest Parkway.  Tiger Chef is an unassuming little storefront tucked into a row of stores.  The do have a top notch website as well.

At work I have heard so much about the restaurant because the owner is a Burmese refugee that the City of Refuge assisted.  Many of the City's employees love to take friends and guests up to Tiger Chef so I was excited to try it out.

Let me backup and tell you a bit about Burma (old name) or Myanmar.  At first I was confused by the differences of names but kind of shrugged it off due to the fact that countries and boundaries change so much on the European continent.  Years ago the British Empire controlled Burma as part of their "Indian Empire".  Since that time there has been multiple coups and takeovers.  Burma is incredibly diverse and has more than 130 religious or ethnic groups and a population of 57 million people. One of those groups is the Karenni.  More than twenty-five percent of the Karenni people have been displaced from their homes due to the fighting.  They are essentially trapped between resistance fighters and the military.  The Karenni fled across the river into Thailand or to other areas.  Thailand is said to have had tens of thousands of Burmese people within its borders before the coup but then thousands were trying to cross the river only to be deterred by the Thai authorities.  On March 12, 2021 Homeland Security designated Burma temporary Protected Status because of the latest coup.  As a matter of fact, our government does not officially even acknowledge the country as Myanmar, but Burma.  If politics or this story interest you, click here to see my source.

Many of our Burmese friends here in Columbia are Karenni so their foods have a Burmese/Thailand twist.  I really love to eat Thai food so I was excited to try the food at the Tiger Chef.  


We rarely order appetizers but I was curious about the ones on the menu.  Yum!  The little potato & onion triangles, Samosa, were artfully presented and the dipping sauce was delicious.

My hubby ordered the Pad Thai and he was pleased that the necessary lime wedges came with the dish.  LOL!  I ordered the Burmese Curry Beef and it was delicious.   I really do love Pad Thai so I will probably try it next time.  Who doesn't love noodles?
